Foxnuts, also known as makhana, are the edible seeds of the aquatic plant Euryale ferox, which grows mainly in stagnant water bodies like ponds and wetlands, especially across regions of India, China, and Southeast Asia. These seeds are harvested, dried, roasted, and popped to create the light, crunchy snack commonly consumed today. Nutritionally, foxnuts are highly valued because they are low in calories and fat while being rich in protein, fiber, magnesium, potassium, and antioxidants, making them beneficial for heart health, digestion, and weight management. In traditional systems like Ayurveda, makhana is considered a sattvic food and is often recommended for improving kidney function, boosting energy, and balancing the body. They are naturally gluten-free and have a low glycemic index, making them suitable for people with diabetes. In Indian cuisine, foxnuts are widely used in both savory and sweet dishes, such as roasted snacks, curries, and desserts like kheer, and they also hold cultural importance during fasting periods like Navratri, when grain-free foods are preferred.
